Kartoffelpuffer (German Potato Pancakes)

Kartoffelpuffer, a popular German comfort food, are crisp-fried potato pancakes made with just a few simple ingredients. They are traditionally served with applesauce but I also like them savoury, topped with sour cream and crabmeat, shrimp or smoked salmon.

Ingredients

600g raw potatoes, peeled and grated&nbsp
1 medium onion, grated
1 egg
1 tsp cornstarch&nbsp
Salt and Pepper to taste
Neutral vegetable oil for frying

Instructions

1. Grate the potatoes and onion. Squeeze out moisture.  
2. Mix with egg, flour, salt, and pepper.  
3. Heat oil in a pan.  
4. Spoon in the mixture and flatten slightly.  
5. Fry 3–4 min per side.  
6. Drain and serve warm.
